    Abstract: 本文以內容分析方式探討國宴菜單，發現飲食關係著族群、國家的文化認同；歷年來的「國宴菜單」隱含著當時的文化與政治意涵，呈現了多元飲食文化現象，從國宴菜單可以瞭解飲食文化在多元文化教育的重要性，本文期待能從飲食文化去欣賞與珍惜多元性的族群文化，並以生態永續發展的思維開展多元文化教育。
