    Abstract: 黑色素(Melanin)的形成為人體抵禦紫外光侵襲的防禦機制,當皮膚曝曬在日光下接收大量紫外線時,黑色素則扮演保護的角色。在研究中發現五倍子萃取液可以抑制酪胺酸脢(Tyrosinase)活性,經過純化後發現其中的沒食子酸對於酪胺酸脢具有很強的抑制效果,且研究後發現沒食子酸也具有很強抗氧化能力。

    本研究進行沒食子酸(Gallic acid)處理小鼠黑色素細胞之整體蛋白質體(Proteomics)變化,利用二維電泳分析,並利用LC-MS/MS鑑定差異性蛋白質身分,最後利用西方墨點法(Western blot)及MRM多重監控模式進行驗證,由研究結果可以發現沒食子酸促進醣解作用及檸檬酸循環有關酵素表現,加速能量代謝產生,另外抗氧化相關蛋白質及細胞內代謝蛋白表現量各有消長。
