    Abstract: 隨著國人健康觀念的提升,越來越多消費者選擇優格奶酪做為飯後的甜點,除了其熱量較一般糕點低之外,也可藉此補充每日所需的鈣質,降低骨質疏鬆危險因子的發生,並且維持腸道菌相之健康,因此市面上各種風味的優格奶酪產品琳瑯滿目。本計畫利用屏東在地的食材-椰脂與鳳梨,開發出新風味的產品,問卷調查結果,得到口感、及風味之可接受度高。
